Strawberry Superfood Waffles

Ingredients
  

  • 2 large eggs (or vegan egg alternative)
  • 1 cup milk (or non-dairy milk)
  • 1/4 cup melted butter (or coconut oil/vegan butter alternative)
  • 1.5 tsp baking soda
  • 1 pinch salt
  • 2 cups Torill's Table Original Waffle & Pancake Mix (or pancake mix alternative)
  • 1 cup diced fresh strawberries
  • 1/3 cup strawberry jam

Instructions
 

  • Preheat the waffle maker. If making pancakes instead, preheat the griddle.
  • Whip the eggs in a large bowl. Add milk, mix, and baking soda, stir well.
  • Add the cooled melted butter/coconut oil to strawberries and jam. Whisk into waffle mixture. Be sure not to overmix.
  • Let sit for a few minutes.
  • Spoon into waffle maker or heated panand cook until done, about 5 minutes.
  • ENJOY topped with whipped cream, fruit, and syrup.. or for a more savoury combo try topping with Brunost cheese or sour cream/plain yogurt!
