Gluten-Free, Dairy Free Pancake & Waffle Mix

Fluffy, delicious, just as good as the traditional recipe! Gluten free and dairy free, and can be made totally vegan with egg substitute! Make a double batch, you will want seconds!

Equipment

  • Large cannister or sealed container for storage of dry mix
  • nonstick griddle or pan for cooking

Ingredients
  

  • 1 cup rice flour
  • 1 cup almond flour
  • ½ cup tapioca flour (tapioca starch)
  • ½ cup coconut flour
  • ½ cup yellow cornmeal
  • ¼ cup white granulated sugar
  • 1 tbsp psyllium husk
  • 1 tbsp golden flaxseed
  • 1 ½ tbsp baking powder
  • ¾ tbsp baking soda
  • 1 tsp salt
  • ¾ tsp xantham gum

Instructions
 

  • Mix it all together in container. Shake it up until well combined.
